closing a project

That's a common feature request with Projects but it can't be done.

Please be sure to let Microsoft know you'd like to see this feature in
future versions by using the Help --> Send Feedback mechanism in any
Office application.

You might try exporting to an archive and then deleting the project or
just assign it an "inactive" category and color.
