Colors of new emails

I've set Preferences so that new emails are shown in red. I also have a rule that tags work emails as being the category Work, which colors them purple, even the new ones. Why aren't the new ones red?

Well the color of the category has precedence over the one set for new
e-mails.

I've set Preferences so that new emails are shown in red.

Try the custom mail view "Received today" instead. Assigning a category to a
message to show when it was received will give poor results. After a bit
even the old messages are red and doesn't tell you anything.

You can also sort using custom arrangements using "Sent" to view your mail.
