I have recently migrated from a pc running outlook. In outlook I could configure e the view on my in box and sent mails so that I could see not just one catagory, for example I could see both who sent the mail who it was sent to and subject can I achieve this with Entourage?

Try using Preview Pane below. Under Tools, you can add additional Columns.
