How can I create a calendar for a summary task and subtasks that will
schedule work for 7 days a week 8 hours a day?

Hi TechArch ,
Welcome to this Microsoft Project newsgroup
Tools/Change Working Time.. and in the dialog select the S for Saturday and
S for Sunday so that the columns go black. Then select Non-default working
times on the right.
