Date and Time stamp

Is there a way of getting a date and time stamp into the Notes section
of a Task? Either through entourage itself or perhaps using a third
party bit of shareware?

After downloading and installing, go to Entourage > Services > Insert to
insert the date and time.

That's strange. I'm running OS X 10.2.8 and I have no problem with it. Do
you have build 6R73? Go to Apple > About this Mac, and click "Version
10.2.8". If you're running another build, be sure to get the latest one.

You can eliminate any services you've installed by clearing these folders:
/Library/Services/
/Users/<Your User>/Library/Services/

There are also a few services that are installed by the system (located in
/System/Library/Services/). If you really want to, you can delete those
using the root super-user, but that could cause unintended consequences (be
very careful if you try this). I'm not sure that would help though.

Follow sections I and II, and then clear the /System/Library/Services/
folder. Log out of root and log in again in your user.

Oh, just get my script. It's much easier than that, and gives you umpteen
formats.
