Date in the past entered in Available To appears in Available From

I have a resource who was available from 10/31/06 through 5/4/07. When I
entered these dates in the Available From and Available To fields,
respectively, under Resource Availability, only the 5/4/07 date appears, and
in the Available From field. The 10/31/06 date doesn't appear anywhere.

What causes this and how do I avoid it? In reading on this topic, Project
allows the user to enter a date ONLY in the Available To field, if desired,
but that doesn't appear in the right field either if the date is in the past.
