Here s a scenario. we have one pc and 3 users in a hotel reception. One
person is answering one email, as it s a very busy place, she has to stop
and answer the customer. The email directly goes to the draft directory. Now
she forgets to finish answering the email and leaves it all alone. Someone
else is coming to the computer and answers new email and what can she see on
the email the first person started to answer, a timestamp with a sentence
like "you replied to this email on this date" and finally noone will answer
the first person forgets about it and the second one sees it has answered.
Is there a way to remove this answered status?

Either tell your personell to look at the Drafts folder to finish unfinished
mails or disable the autosave option. I would go for the first options as in
the case of a crash or a a failure the entire message could go lost if the
autosave feature is disabled.

Anyway, you can change this behaviour here;
Tools-> Options-> tab Preferences-> button E-mail Options-> button Advanced
E-mail Optionss...
