Is it possible to have NO default category assigned to the emails per
default?

It is. If you have any rules that apply categories to incoming messages,
disable them. One other thing to do is go to Entourage>Preferences, Address
Book, and, in the Messages section, disable "Automatically match message
categories to senders' categories".
