When I have several email addresses for a user how do I make Entourage use one of them by default?

In their address book entry highlight the address and click on the "Make
Default" button.

Good question. Try the following:
1. Open Entourage and click on the "Tools" pull down menu.
2. Next, go to the bottom and click on "Accounts."
3. Highlight the account you want to make default and click on "Make Default."
4. Once it is the default account, it will show itself in bold print.
