Is there any way to recover items I deleted from the sent mail folder?
For POP mail, look in the 'deleted items' folder.
If the account is IMAP, then the settings in prefs for handling deleted mail
may cause the mail to be purged completely when you leave that folder, in
which case there is nothing you can do.
