Deleting email address that pops up

Operating System: Mac OS X 10.5 (Leopard)
Processor: Intel
Email Client: pop

When I began a new email Entourage guesses the email address of the person I am writing to. In this case it guesses correctly but offers two possible email addresses. One of them is no longer valid and I'd like to delete it. It isn't in the contacts or address book. There is no message in the in box, drafts or deleted from this address. Is there a way to kill out this particular address? Thanks.

Thanks. Giving it a category of Junk did nothing, but adding it and then deleting it from the address book did the trick.
