Deleting messages

Where do I change the preferences for this operation? When I read a message
and hit delete, it ends up in the deleted items folder. When I read a
message and then open another message, the first completely disappears. It
is possible to reclaim such a message?

Look under View in the menu bar. Do you have "unread only" selected?

If a message is actually moved, then you can undo with command-Z.
