The option for turning off SERVER copies of Sent Items on IMAP Accounts is
in the options for the account itself. Tools/Accounts/Mail/[the IMAP
acct]/Advanced. (In Entourage 2004, you can also get there via
Entourage/Account Settings.)
The very first option on that page is:
ˆ Store sent messages in this IMAP folder: <Sent Items (IMAP acct)>
That option is only checked if you have previously checked it and chose the
folder. It's not checked by default, as far as I know: I don't see how it
could be. Just uncheck it now - disable it - and your sent messages will
then be saved locally in the local Sent Items folder "On My Computer" if,
and only if, you have the preference (the one you object to) in
Entourage/Preferences/Compose to "Save sent messages in the Sent Items
folder" enabled. If you uncheck that preference too, your sent messages
won't be saved anywhere.
The option to save sent messages on the IMAP server HAS to be on a
per-account basis (i.e. within Tools/Accounts/[this account]) because people
can, and do, have more than one IMAP account, each with its own set of
folders. I have two IMAP accounts, and each has its own Sent folder (with
different names, too). This method of setting and unsetting the server Sent
messages has been in place ever since Entourage has existed, and since
Outlook Express before it introduced IMAP support.
It is true that the Compose preference panel does not explain that IMAP
account settings OVERRIDE the Sent messages preference. The language would
get pretty complicated if it did, but I suppose they should try. But it's
not true that it applies _only_ to POP messages. That's why it's not in
per-POP-account setting. It really does apply to the whole identity, where
not _overridden_ for specific IMAP accounts. If you uncheck the Advanced
option for Sent IMAP messages in an IMAP folder (Tools/Accounts/Mail/[the
IMAP acct]/Advanced), THEN the preference to save messages in the (local)
Sent Items folder in Entourage/Preferences/Compose does apply to those IMAP
as well as to POP messages. I suppose the pref could read something like:
ˆ Save copies of sent messages in the Sent Items folder, when not
specified in an IMAP or Exchange account folder
That might make things a bit clearer. I can pass this suggestion on, and it
might be spotted here too, but you can make the suggestion yourself via
Help/Send Feedback. Do not expect anything of this sort to change before the
next major release (i.e. every 2 or 3 years years). They do not consider
User Interface changes for minor updates.

I turned off server copies of Sent Items for an IMAP account, but unchecking
this is like dancing in circles - no effect on sent mail! They keep being
saved. If this only works for POP accounts then why is it in PREFERENCES and
not in Tools->Accounts for POP accounts ONLY???
Worse yet, this was discussed back in '03 and is STILL BROKEN in the latest
v11.2.3(!!!):
