If you are installing using an MST file (thru Custom Installation Wizard), just choose to make that Feature unavailable.

And from CD, there is not an option for Custom install? Then, each aaplication should be displayed with all of its components and some (including Stationery under Outlook, I am fairly certain) can be made "Not Available.
