How do I create an email distribution list from a single category in outlook
contacts?

Usually you don't because there is no need to. If you've already created a
category, use it instead of a DL. Select the Category in the By Category
view > Actions > New Message to Contact.
Categories are more reliable and more flexible than DL's.
