Quite right, you can't
You can send feedback to the developers on this issue. Use the last menu
item under the 'Help' menu - "Send Feedback on Entourage". This message will
go directly to the developers. The more people that request this feature the
more likely it is to be implemented.

I will do, it is a big omission in my opinion
is there a work around? or do I just run with my multiple text files

The workround is to use a local 'group' contact.
In the address book, you can still create a new group, and add both local an
exchange contacts to it. These will work in all ways like a server-side
distribution lists, except that they are maintained locally and are not
synced to the server, so they are unavailable to anyone else.
