e-mail sync betwen laptop and desktop

I bring mail down on both machines and want them to be the same. Can
I simply copy the entourage mail file from one computer to the correct
location in the other machine? What is the name of the mail folder?

Yes. You can copy the Microsoft User Data from one computer to another.
It's located here:
/Users/<Your User>/Documents/Microsoft User Data/

You might need to use Activity Monitor or Process Viewer to quit the
Microsoft Database Daemon before attempting the replacement.

I sync the mail on my iBook and desktop by selecting the "Leave a copy of
message on the server" box in the account options under the Tool menu. This
way it downloads mail on each machine and you have copies of all mail on
both.

Exchange works similar to IMAP in this respect; mail is stored on the
server. So with Exchange there is no need for this functionality. You can
simply set up the Exchange account on another machine and its contents
should appear in the Folder List.

Just to clarify (I'm trying to decide whether or not to set up an IMAP
server for myself): if one is using an IMAP server (with two computers
connecting - a desktop and a laptop) will both computers have the same
messages AND the same organization?

I know I can get the messages to both machines, what I need is for them
to be in the same folders, projects, etc. Right now I am "leaving
messages on the server" in a POP account, but all that gets me is the
same messages in my In Box. I have to sort all of them twice - which is
pretty inefficient.

You'll need to set up projects separately on the server. But mail folders,
messages, etc - yes. All mail clients on all computers will see the same
hierarchy, folders, messages, flags, etc. etc. That's what IMAP is for.
