email address choice includes deleted items

If I change say, J Smith's email address from 'x@x' to 'y@y', it comes up
with the option 'x@x' against J Smith in the 'To' box and y@y is hard to find.

For reference, I have all my address info in Contacts - I am fairly sure
that all the other address books are empty, including Outlook Express.

Also, is there any way of finding the owner of a telephone number on
Outlook? Palm OS does it with ease

Outlook auto complete remembers the previous address. Use your arrow keys to
highlight and delete if it's wrong. Also open the contact and change Email 1
to the preferred address and the old one to Email 2 or delete it if you
prefer.
