Email address in the To: of a new email

Operating System: Mac OS X 10.5 (Leopard)
Processor: Power PC
Email Client: pop

When starting a new email I enter the first few letters of someones email address and the program shows a list of several address which are in alphabetical order. Lately I find that there are addresses that I no longer want in that display. Is there a way to permanently delete and address so it does not show up in that area again.
