Email Aliases?

Help me out folks. I've got to be missing something when it comes to some
preference. Or maybe not?

I toy around with my own email server and can create an unlimited number of
email aliases to help me segregate external contacts and to track down where
spam may originate. Seems that while I can certainly receive mail, and
through the rules process filter them into individual folders, I can't
"reply" with the alias but only the primary email account.

So is there a way to reply with an "alias"?
