Email delegate

I am a delegate on my boss's email and would like to expand the folder list in my email to include sent items and deleted items - is this possible

Yes, he must give you permissions on those folders then and also give you
"Folder visible" permissions on his mailbox (Outlook Today). Then you can
add his mailbox by Tools-> Accounts-> properties of Exchange-> button More
Settings-> tab Advanced-> button Add
