email text appears to be extended ascii?

Hi, using MS Entourage 2004 vers 11.0. My techie buddies that use
different kinds of email clients complain that what I send them from my
entourage client is using some kind of extended ascii so characters
show up funky-like an apostrophe shows up as a comma for example. Is
there a toggle to adjust someplace in my client to not use whatever
extended ascii they have by default?

Ask them what character set is being set in the mails they're receiving from
you.

You can specify the character set you are using (for just the message you're
editing now?) using the Format menu > Character Set > (Choose something).

UTF-8 would be a good choice, and Western European (ISO) would be second
choice IMHO. It depends a bit which part of the world you're in :)

The character set doesn't have to have "(Windows)" at the end to be readable
by Windows mail clients, by the way.

Go to Tools > AutoCorrect. Click the "AutoFormat" tab, and, under "Replace
as you type", uncheck "Straight quotes with smart quotes". Those are the
characters that usually cause these problems.

It might also be beneficial to experiment with different character sets,
like Chris said.
