When sending an email to several people at once, I want to hide the email addresses from recipients. How do I do that? I used to know several versions back, but can't find the way now.

You can just add them as BCC (blind carbon copy) recipients. Then the
recipient list will not appear in the message headers and will be invisible
to the recipients. Alternatively, you can create an Address Book group and
check "Don't show addressesŠ" to have the addresses hidden to the recipients
when sending mail to the group.
