Entourage 2004 Apostrophe Issue

After I send an e-mail message using a word with an apostrophe (Œ), when I
get the response I notice that the apostrophe in my original message is
distorted with different symbols (e.g. %,). How can I set my mail so that
the people who receive my e-mail will get the correct symbol (Œ)? Thanks.

A few options:
Turn off smart quotes in Tools:AutoCorrect so you'll never send curly quotes
Send in Unicode (Format:Character Set)
Change the incoming messages to Western European (Windows) in
Format:Character Set

The problem has to do with the way that Outlook Express for Windows (and
possibly other mail clients) interprets and sends out messages. An
explanation and a way to deal with the problem can be found in FAQ article
#175 on The Entourage Help Page:

You can help to avoid this problem by not sending any non-standard quotation
marks in messages. Go to Tools - AutoCorrect, click the "AutoFormat" tab,
and under "Replace as you type", uncheck "Straight quotes with smart
quotes", and click OK.
