Entourage 2004 - How do I edit subject line?

[DW, Louisville, KY]

I used to be able to edit the subject line in Outlook 2001 for Mac and I know
that Window users can edit via Outlook 2003. Is there a way for me to edit
subject line or message in Entourage 2004. Help?
