entourage (2004) reply formating - signature

This is something that annoyed me to no end in previous versions of
Entourage; why when replying to a message (with the insertion point at
the top of the page) does a new signature appear at the bottom of the
email (total separate from the response)? Argh.

Should either have the option of removing signatures all together from
replied responses, or better yet, just keep the signature under the
insertion point!

Am I missing something here or is this just a huge pain?
