But actually, it can now be done in Office 2004. Make this signature with
tables, as you'd like it, in Word 2004, and save it as a template (or
stationery). If you want to use it, open it from the project Gallery, or a
copy from within Word's File/Open, or double-click if saved as stationery,
and write your whole message above the signature (under any "letterhead" too
if you like) in Word. When ready to send, go to File/ Send to Mail Recipient
(as HTML), and voilà! A complex HTML message sent from Entourage. You'd have
to get used to making messages in Word rather than in Entourage, but you
could make a button and keyboard shortcut for opening a new document from
this template to make it pretty easy.

You¹re correct. Tables are considered complex HTML, in that Entourage¹s
HTML creation doesn¹t support it. The only way to send HTML tables via
Entourage is to create the e-mail message with the table in Word and then go
to File -> Send to -> Mail Recipient (as Attachment). But that¹s not
practical for a signature.
