Does anyone know if it is possible to sort addresses by last name?
Also, how to save the two in case of hard drive crashes. I am new to
running Entourage 2004 on my new Mac mini.

Entourage automatically sorts contacts by their last name, only, it displays
them as "first name" "last name".

An easy way to back up all of your data (including mail, tasks, notes, etc.)
is to make a copy of your identity folder, located here:
~/Documents/Microsoft User Data/Office 2004 Identities/<Your Identity>/

Then, just copy your identity folder to another drive to back it up.

Another way is to use the File > Export option. You can then create an
Entourage archive of your calendar events and contacts that you can import
again later if you need to.

("~" represents your home folder, usually located in /Users/<Your User>/.)
