the list is being sorted by, and whether it's a forward (A-Z) or
reverse (Z-A) sort.

It alphabetizes by Last Name although it displays as FirstName LastName.

Several of my contacts in the Address Book have multiple email
addresses. Can I specify which email (home, work, other) I am to be
emailing to? Can I specify that I wish to email to all three email
address types? I suppose whatever the solution is to mailing to ALL
email types, that it would work when mailing to an entire catagory?

When you are typing in the name of the person and the auto-fill menu is
showing with their name selected, you can press the right arrow to choose
one of the other e-mail addresses. Once a person has been added to the To
field, you can control-click on it to choose a different e-mail address to
send to.
If you want to send to all three addresses for a contact, you have to add
each separately. If you do this regularly, you might want to add all 3
addresses to a Group.
