Entourage Calendar Automatic Categories?

In outlook, there is a way to assign an appointment in calendar to a certain
category based upon criteria that the user can specify. I cannot find such
a function in entourage. Am I missing anything? Is this going to be a new
feature in Office 2004? (without breaking NDA of course)

No built in way, but I think it¹s a very good idea!

You can send feedback to the developers on this issue. Use the last menu
item under the 'Help' menu - "Send Feedback on Entourage". This message will
go directly to the developers. The more people that request this feature the
more likely it is to be implemented.
