Is there any way to change the default calendar to a public exchange calendar? My main calendar is a family calendar we have hosted on an exchange server. If that is not possible, is there a way to change where new events/appointments are directed when using the toolbar icons?

You can only change your default account. The calendar associated with
that account is then the default calendar.

Since public folders are not associated with accounts you can not select
a public folder calendar as your default. Rules, unfortunately, don't
have the ability to copy incoming calendar items to calendars.
