How do I send an email to all the members of a category without typing in all their addresses?

You need to create a group using category.

1) select New Group
2) sort by category
3) select all in that category and drag into group

Address message to group.

tip: I suggest naming all groups with the prefix group:

Example group: holiday cards

This way all groups sort together in the Address Book.

If you want to sort the Addresses by group or non-group, you can click on
the column called "Contact Type" (indicated by a silhouette of a head and
shoulders).
