All you can do with Exchange 5.5 is mail set up as IMAP. Nothing else. You
need Exchange Server 2000 or later for more Exchange functionality.

You can also access the GAL through LDAP (providing LDAP is enabled).
The problem with Exchange 5.5 relies with the Free/Busy server which uses a
different format Entoruage can't use which prevents you from synchronizing
calendar and address book to the server.

Actually, the problem is that Entourage 2004 uses WebDAV to synchronize
calendar and contact data with the Exchange server. Exchange 5.5 doesn't
support WebDAV; Exchange 2000 and Exchange 2003 do. Incidentally, this
is why the Exchange 2000/2003 version of Outlook Web Access can't be
used to give full access to mailboxes stored on an Exchange 5.5 server.

The workaround remains the same: use IMAP for mail and LDAP for GAL access.
