Entourage frequently stops working

I have a Win 2k3 srv Std Ed running Exchange 03 with roughly 20 Win XP
clients and 7 Mac OS X (Panther) clients. The server has been up and running
for over a year, Exchange was just installed about two months ago, and
Exchange was went into production use aabout one month ago. Brightmail with
spam and antivirus is installed as well as Symantec Antivirus Corp Ed 8.1.

The Macs, whihc have Entourage 04 and were upgraded from X, worked with the
Exchange server fine for several weeks. Recently, they started
getting -18600 errors whenever they try to send mail. Some of the time the
users can onl read mail, some of the time they can only view mail they
already received, and at others they perfectly work fine. The Macs are G4
laptops and configured for VPN access into the network via a the same Win
2k3 server that Exchagne is on. Whenever Entourage is not working for the
one or all of the Macs, I can manually add a DNS server and then remove to
get Entourage to start working, or I can log into the VPN while the machine
is still at the office to get it to start working. (Forgot to mention that
the Macs use DHCP that's coming from this same server.)

This whole problem started within 2 days of me adding the external DNS
servers to the DHCP scope options to avoid killing www access for the
clients whenever the server is rebooted. I'm assuming that this whole issue
is related to DNS. But, at this point I'm not sure. Let me know if you need
any other info. BTW, TCP/IP and AppleTalk are the only two protocols running
on the server. File and Printer services for Mac are running and Network
Load Balancing is not. None of the PCs are have had similar issue.
