That option allows you to send "simple" HTML messages with formatted text
(bold, italic, color, etc.), colored backgrounds (if you insist) and insert
graphics, movies, etc. If you want to include tables and/or URL links to
webpages on web-servers, do it all instead in Word 2004 and, when ready,
select File/Send To Recipient (As HTML). (If you're not in 2004, or you want
to send pre-formed HTML documents, it can be done by script. Write back.)

Menu bar: Entourage/Preferences/MailandNewsPrefs/Compose: select HTML
format.

It is quite simple to create and send html e-mail on a PC with Outlook
Express. You can even view the html source and edit, and preview
before sending.
I would like to do the same with Entourage (Office for Mac 2004) but I
don't see the same options. Is this possible and how do I do it?
