I have one of my email accounts through Exchange. Assuming I leave the
files in the exchange inbox- are they being captured/stored in my
identity database? (just wanting to know for back-up purposes).

No, but you can use a script to move them from the server to folders "On My
Computer".

AutoArchive Exchange Account to "On My Computer"

Move all e-mail older than 60 days from your Exchange account folders to
archive folders within the "On My Computer" folder tree.
