Having a problem with a user that their Sent Items are synching, but are showing up as no subject whenever looking at them. It seems like there's a place holder for the actual email, but not the real email. The problem is corrected by resynching the cache, but that doesn't seem to last as the problem will show up only a day or two later. Anyone having this problem?

Were the messages originally sent from an iPhone?? There has been some
reports of related issues with iPhones and Exchange servers.

The problem is occurring with any sent mail. Whether from iphone or not.

Is it happening with messages sent from Entourage or from OWA??
If yes, this is really weird. If not, then you are affected by the
ActiveSync bug,

It is happening with messages sent from Entourage and from the iPhone. Haven't used OWA.

Then you might consider rebulding your identity (press the option key
down as you launch Entourage). It might be corrupted,

This is a known issue. Have a look at my blog post for a script to read
them and be sure to read the comments for improved versions of the
script that others have posted:
