Is there a way to separate the Mail and Calendar components so they
can be viewed simultaneously on different monitors?

Yes, there is. On your primary display, open Entourage's main window and
switch to mail view. Then click on File>New>Open New Main Window, and drag
that new main window to your secondary display. Once you've put it there,
just switch to calendar view, and you should be good to go.

Open Entourage > Preferences > General and check the Double-clicking in
folders list opens a new window checkbox. Now when you double-click the
calendar, it will open it in a new window.
