Entourage with Exchange 2000

I have a mac client using entourage to access email from an exchange 2000
server. When deleting messages from the inbox, they are immediately deleted
from the server. However, if he tries to only delete the attachment and
keep the text of the email, the attachment will be deleted from the email on
his side but remains on the server. Any tips? Or has anyone experienced
this issue previously?

If he has his delete model set up to mark as deleted and automatically
purge, then this is by design. You can change this setting in the Advanced
tab of the IMAP account settings.
However, if he tries to only delete the attachment and
keep the text of the email, the attachment will be deleted from the email on
his side but remains on the server.

This is by design. Changes to the local copy of the message are not pushed
back up to the server. If he wants to do this, move the message locally
(deleting the original from the server), make the changes locally, then copy
the changed message back up to the server.

But not in an Exchange account. In my limited experience with accessing
Exchange accounts from Entourage, on deletion the message is moved to the
"Deleted Items" folder on the Exchange Server, not purged. I don't know
enough about Exchange Servers to begin troubleshooting here.
