When I have Entourage open on my iMAC it will not allow me
to open any other application like iPhoto to view a picture
attachment or Word to open a Word document, etc. I have to
close Entourage, open the other application and then open
Entourage.

Does anyone know the fix or work around?

What version of Entourage, what version of MacOS?

Entourage 2004 has security preferences which show an alert whenever you try
to open an attachment, and you can then choose to open an attachment or not.
