Entourage "zits" in e-mail

When I send an e-mail that includes quotation or other special charater
marks, they get changed to other characters, such as percentages etc. Is
there a way to stop it? My clients think I don't know how to spell (they may
be right, but I don't need entourage to help prove it).

be right, but I don't need entourage to help prove it).

Send it in a different character set such as Unicode or if they are all on
Windows, use Western European (Windows).
