If I want to connect to our Exchange server, is there an email client
included in Tiger that will do that when I have the iBook connected
via VPN or do I need Entourage to do that?

Mail can do it, but not nearly as well as Entourage.

For instance Entouage has built-in and better support for calendar invites etc.

Mail support for Exchange has some limits.
It requires IMAP to be turned on on the Exchange server. It will then
support the IMAP specificities of Exchange accounts. The Address book
integration can also be acheived through the Address Book application. I
don't think you can do anything for calendar and public folders though.
