Exchange server: deleted items lose creation date

Using OS 10.2.8, Entourage 2004 and exchange server:

I'm finding that a large number of email messages lose their creation date
when deleted from other folders. Does anyone know of a reason for this?
It's causing a problem as I use a schedule to delete msgs from the Deleted
Items folder once they're more than x days old.
