I have a Mac connected to an Exchange server using Entourage as the client
program. If I move a message from the Exchange in-box to the Entourage
in-box it retains the icon that, when clicked, will allow me to delete the
Exchange copy. Does this mean that the mail is really in two places (i.e. in
the Exchange store AND Entourage), since I know that this would not be the
case in Outlook.

It depends on how you are moving the message. By default, dragging messages
from online folders (such as those on an Exchange Server) to local folders
(On My Computer) will create a copy on the computer, leaving the original
copy on the Exchange Server. That's why you see the "+" icon when you drag
it onto a local folder. If you use the "Move" toolbar button or menu item
under the "Message" menu, that will actually move the message to the local
folder, deleting the copy on the server.

If you drag the email(s) while holding Command-Option, it will move the
message from the server to your folder.
