Every time I rebuild my data base I lose all my categories. How do I
recover my categories or prevent this from happening in the future? ­ I am
connected to an exchange server....

Office 2004 and Exchange?? That's unfortunately unavoidable.
There are scripts that can be used to write the categories to the notes
of contacts and events and restore them later, but not for e-mails.
