File attachments converting to .dat in Entourage 10.1.4

Within the past couple of weeks attachments ( .pdf, .jpg, .eps,.....)
are being converted to .dat. for our one MAC OS X 10.3.7 user using
Entourage 10.1.4
The only change has been our old NT 4.0 PDC was replaced with a new DC
running Windows 2000 Server.
The Exchange server is the same running NT 4.0, Exchange 5.5 sp4, with
KB891711, KB873350, KB841533, and KB840987 as the last
updates installed.
My Windows 2000/XP professional workstations can receive the same
e-mails with no problem. The emails are being sent in plain text
format.
Any suggestions as to what might be going on?
