i was wondering when i file something under two categories
in the category field, can i search for it under both
categories, or can i only search for one keyword at a
time? If i can only search with one keyword, can i search
within results? thank you for your time!

Yes, you can search for both. Try entering cat1 AND cat2 in the Advanced Find dialog.
