Is there any way I can restore lost folders? I found 3 of them missing and I've no idea why. I didn't delete them as far as I know, and I could understand accidentally deleting one, but not 3. I'm not expertly computer literate so any replies would need to be in non-technical terms please.

What version Microsoft Entourage 2004 are you using? Including update if
any. How to find version info:

Any other accounts like IMAP, Exchange?

Usually, you accidentally delete folders when you select to delete a
message. You should have received an error message when deleting a folder.

Open preferences --> Notification --> Check Require confirmation when
deleting.

Check the Deleted Items folder for missing folders. If the folders are
there, Drag them out.

It's also easy to drag them into a nearby folder.
