From field in emails has wrong name

I have been accidentally adding records to the address book (using the "add to address book" command and choosing to add them to existing contacts when there is no name in the email). As a result, I've been creating address book records (about 70) with no name but four unrelated email addresses. Apparently, after four email addresses are added to the same record with no name, a new record is created and the next three times this happens, the email address is saved in that record.

When a message arrives from one of these email addresses, Entourage saves the email with a From field that shows one wrong email address ([email protected]) as the name in the email's From field, and the correct From email address ([email protected]) as the email address. So at the top of the received email I see - From: (e-mail address removed) <[email protected]>.

When I search, for mail from tony, an email from joe shows up as a result. When I fix the record in the Address Book, the email still has the wrong name. I don't understand why the From field can't be set to show what was actually in the From field in the sent email, and why a mistake (or anything for that matter) in the Address Book is saved to the email, apparently permanently corrupting it.

Is there a way to fix these emails? Also, is there a way to search emails for From info in the internet headers?

When adding an address, it's up to you to check the data. If there is no
name, add it yourself. For example ([email protected]), use tony from the
address or use the signature they used in the message.

Find the contacts in the Address Book that have no names and create
individual entries for each. Sort by column to view.

Entourage 2008 has the ability to show First Name and Last Name. see

Thank you. But my problem is not with the Address Book. I have corrected the bad Address Book records. My problem is that there are many received emails with incorrect information appearing in the From field of the email. One would think the data in the From field of the email would be the data sent by the sender, but Entourage seems to add and save data from the Address Book (in this case mistaken data) in the received email.
