I'd like to set a rule that marks all mail with a date more than two days in
the future as spam. Seems to be another spammer trick to get to the top of
your inbox.

In the rules setup "Add criterion" it seems you can set "Date Sent" to less
than 5 days or greater than 5 days without any difference in the results
i.e. All email gets caught.

Any suggestions?

That criterion means "more than 5 days ago" and "within the past 5 days (and
indefinitely into the future)" respectively, in rather cryptic
"developer-type" language. Neither of them is referring to a 5-day
demarcation in the future. You'd have to do this by script. You might also
trash messages from friends with an incorrect Date&Time configuration on
their computer.
